Ingredients:
For the Beetroot Patties:
- 2 medium beetroots (grated)
- 1 cup cooked chickpeas (or black beans)
- ½ cup rolled oats (or breadcrumbs)
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1 tbsp olive oil
- 1 tsp cumin powder
- ½ tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp soy sauce or Worcestershire sauce
- 1 egg (or flaxseed egg for vegan)
For the Burger Assembly:
- 4 burger buns (whole wheat or brioche)
- 4 slices of cheese (optional, can use vegan cheese)
- 1 tomato (sliced)
- ½ cup lettuce leaves
- 1 red onion (sliced into rings)
- 4 tbsp mayonnaise (or vegan mayo)
- 1 tbsp mustard (optional)
- 1 tbsp ketchup
Instructions:
1. Preparing the Beetroot Patty:
- Peel and grate the beetroots into a large bowl.
- Mash the cooked chickpeas with a fork or pulse them in a food processor until slightly chunky.
- In a pan, heat olive oil and sauté the chopped onions and garlic until soft.
- Add the grated beetroot to the pan and cook for 2-3 minutes to remove excess moisture.
- Transfer the beetroot mixture to a bowl and let it cool.
- Add the mashed chickpeas, rolled oats (or breadcrumbs), cumin, smoked paprika, salt, black pepper, and soy sauce. Mix well.
- Add the egg (or flax egg) and combine until the mixture holds together.
- Shape into equal-sized burger patties.
- Place the patties on a tray and chill in the fridge for 30 minutes (helps them firm up).
2. Cooking the Patties:
- Heat a little oil in a pan over medium heat.
- Cook the beetroot patties for about 4-5 minutes per side until crispy on the outside.
- If using cheese, place a slice on top of the patty while it’s still hot so it melts.
3. Assembling the Burger:
- Toast the burger buns lightly on a pan or grill.
- Spread mayonnaise, mustard, and ketchup on the bottom bun.
- Add lettuce, a slice of tomato, and the cooked beetroot patty.
- Add red onion rings for extra crunch.
- Top with the upper bun.
4. Serve & Enjoy!
- Serve with fries, sweet potato chips, or a fresh salad.
Tips:
- For a vegan version, use a flax egg (1 tbsp ground flaxseed + 3 tbsp water) instead of a regular egg.
- For extra flavor, add some crumbled feta or goat cheese to the patty mixture.
- Make it spicy by adding a dash of chili powder or hot sauce to the patty mixture.
This beetroot burger is a colorful and healthy alternative to a traditional burger while still being super delicious!
