Ingredients:

For the Beetroot Patties:

  • 2 medium beetroots (grated)
  • 1 cup cooked chickpeas (or black beans)
  • ½ cup rolled oats (or breadcrumbs)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tbsp olive oil
  • 1 tsp cumin powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp soy sauce or Worcestershire sauce
  • 1 egg (or flaxseed egg for vegan)

For the Burger Assembly:

  • 4 burger buns (whole wheat or brioche)
  • 4 slices of cheese (optional, can use vegan cheese)
  • 1 tomato (sliced)
  • ½ cup lettuce leaves
  • 1 red onion (sliced into rings)
  • 4 tbsp mayonnaise (or vegan mayo)
  • 1 tbsp mustard (optional)
  • 1 tbsp ketchup

Instructions:

1. Preparing the Beetroot Patty:

  1. Peel and grate the beetroots into a large bowl.
  2. Mash the cooked chickpeas with a fork or pulse them in a food processor until slightly chunky.
  3. In a pan, heat olive oil and sauté the chopped onions and garlic until soft.
  4. Add the grated beetroot to the pan and cook for 2-3 minutes to remove excess moisture.
  5. Transfer the beetroot mixture to a bowl and let it cool.
  6. Add the mashed chickpeas, rolled oats (or breadcrumbs), cumin, smoked paprika, salt, black pepper, and soy sauce. Mix well.
  7. Add the egg (or flax egg) and combine until the mixture holds together.
  8. Shape into equal-sized burger patties.
  9. Place the patties on a tray and chill in the fridge for 30 minutes (helps them firm up).

2. Cooking the Patties:

  1. Heat a little oil in a pan over medium heat.
  2. Cook the beetroot patties for about 4-5 minutes per side until crispy on the outside.
  3. If using cheese, place a slice on top of the patty while it’s still hot so it melts.

3. Assembling the Burger:

  1. Toast the burger buns lightly on a pan or grill.
  2. Spread mayonnaise, mustard, and ketchup on the bottom bun.
  3. Add lettuce, a slice of tomato, and the cooked beetroot patty.
  4. Add red onion rings for extra crunch.
  5. Top with the upper bun.

4. Serve & Enjoy!

  • Serve with fries, sweet potato chips, or a fresh salad.

Tips:

  1. For a vegan version, use a flax egg (1 tbsp ground flaxseed + 3 tbsp water) instead of a regular egg.
  2. For extra flavor, add some crumbled feta or goat cheese to the patty mixture.
  3. Make it spicy by adding a dash of chili powder or hot sauce to the patty mixture.

This beetroot burger is a colorful and healthy alternative to a traditional burger while still being super delicious!
